The Frenzied SLPs are sharing their favorite quick and easy recipes to help make sure your dinner time is a little less frenzied!
I work 10 hour days, so by the time I get home, we have to try to fit dinner, homework, showers, and bedtime into about a 90 minute period of time. I try to plan and prep most of my meals on the weekend so that my husband (who gets home about an hour before me) can heat the food and we can (hopefully) eat when I get home.
There are a variety of different templates for meal planning. Fab-n-Free had a ton of free resources listed on their site. The Project Girl also has really cute free printables for meal planning.
I did create a quick weekly meal plan that I use with my husband. I put a copy on the fridge and also send him a weekly email with what needs to be prepped before I get home. You can pick up my meal plan for free by clicking on the pictures below.
In Minnesota, we love a good “hot dish.” A hot dish is generally made with some form of creamed soup, a meat, starch and hopefully something crunchy that is sprinkled on top. It goes without saying that is should be cooked in a 9 x 13 pan.
Chicken Stuffing Hot Dish
1 can cream of chicken soup
6 boneless, skinless chicken breasts
6 slices of white cheese
Stuffing mix
Butter
- Preheat oven to 400 degrees.
- Spray a 9×13 pan with non-stick spray.
- Place chicken breasts in the pan.
- Pour cream of chicken soup over the chicken breasts
- Top each chicken breast with a slice of white cheese.
- Put 3-4 T of stuffing mix on top of each chicken breast.
- Add small slivers of butter to the top of the stuffing mix.
- Bake for 30 minutes or until the chicken is finished baking.

Yes! I can always recognize a fellow Minnesotan by their use of “hotdish”! Always “hotdish”, never “casserole” 🙂 I have been making my own “cream of whatever” soup for hotdishes and it is so yummy (but does take away the convenience factor…) Thanks for sharing your menu planner!
